Pineapple Candy Aerobic Yeast Fermentation Over the last several years, innovative and adventurous coffee producers have been experimenting with new ways to process coffee to yield exciting flavors. Finca La Bastilla takes some of their high quality coffee each year and adds their spin on the traditional washed process. The coffee is picked at optimum ripeness, then the highest quality cherries are sorted, pulped and washed. The difference in this method comes during the fermentation process. Pulped coffee seeds are soaked in fermentation tanks with commercial grade yeast for three days. This additional step accentuates the fruit notes of the coffee and creates a lush tropical profile.
