Finca La Bastilla is an award-winning estate, mill, and exporter located in northern Nicaragua near the city of Jinotega. Their farms are set alongside Dantalí El Diablo Nature Reserve and utilize agricultural practices that are sustainable for the environment and neighboring communities. They cultivate distinct varietals based on the micro-climates of the region and then apply innovative processing methods to create unique flavor profiles. La Llamada Geisha
The geisha (also spelled gesha) varietal of coffee originated in Ethiopia. Best known for exceptional and rare cup qualities with delicate floral notes, this varietal was introduced in Central America where it gained popularity and took off as a premium product in the specialty coffee market. Taking great care and attention to detail to produce with lower yields makes it some of the most prized and sought after coffee in the world. 

Pineapple Candy Aerobic Yeast Fermentation
Over the last several years, innovative and adventurous coffee producers have been experimenting with new ways to process coffee to yield exciting flavors. Finca La Bastilla takes some of their high quality coffee each year and adds their spin on the traditional washed process. The coffee is picked at optimum ripeness, then the highest quality cherries are sorted, pulped and washed. The difference in this method comes during the fermentation process. Pulped coffee seeds are soaked in fermentation tanks with commercial grade yeast for three days. This additional step accentuates the fruit notes of the coffee and creates a lush tropical profile.

El Peñon Caturra
The caturra varietal is grown all over Central and South America. It is a hardy coffee tree that can tolerate swings in temperature, rainfall and wind. When grown at high elevations it produces very pleasant and high quality caramel and citrus-forward profiles that are great for all kinds of brewing methods. We added a bit of roast development on this coffee to draw out the sweetness.
